Irish Bangers and mash with Guinness onion gravy, also referred to as sausage and mash. As much as I love corned beef and cabbage and Irish Soda bread for our St. Patrick's Day dinners I have since learned that it is not a traditional dish served on St. Patrick's Day in Ireland. It is a traditional dish that is found in Great Britain and Ireland so I figured it would be perfect to enjoy this year to change things up for St. Patrick's Day.
If you have never had Irish Bangers And Mash you should totally skip the corned beef at least once and make it. You may just find that you love it so much that it becomes a weeknight meal too. It is simple to make but has amazing flavors that are perfect for dinner!

What is Bangers and Mash?
Bangers (sausage) and mash (Mashed potatoes) is a traditional dish of Great Britain dish of sausage that is cooked in a stout beer served with mashed potatoes and a stout gravy. Bangers and Mash is a popular pub dish that is served in the UK and Ireland that is also sometimes referred to as sausage and mash.
Sausage and Mash Recipe
Irish Bangers And Mash sounds harder to make then it is. The important thing to remember when making this bangers and mash recipe is that you need a stout beer. You do not want to take a can of beer and make this. You will not be happy with the results, trust me on this. If you want an Irish stout beer to make your bangers and mash go with Guinness.
This bangers and mash recipe has homemade mashed potatoes, and the most amazing homemade onion gravy recipe. Seriously this is the best easy bangers and mash with onion gravy recipe ever.
What Sausage is used in Bangers and Mash?
Traditionally thick pork sausage is used to make classic bangers and mash, however if you do not have pork sausage on hand you can use beef sausage. I have also made sausage and mash with raw bratwurst and it turned out amazing.
What to serve with Bangers and Mash
Bangers and mash is a perfect meal on its own but if you are wanting to add more to the meal you can also serve some peas and crusty fresh bread or some of our favorite veggie side dishes.
Bangers and Mash Ingredients
Bangers Ingredients
- 1 pound raw sausage
- 8 ounces Guinness stout beer
Stout Gravy Ingredients
- 3 tablespoons butter
- 1 medium onion thinly sliced
- 3 cloves garlic minced
- 4 tablespoons flour
- 1 cup stout beer
- 14.5 ounces beef broth
Mash Ingredients
- 1 pound russet potatoes
- 2 tablespoon butter
- 1/2 cup buttermilk
How to Make Bangers and Mash
How to Cook Sausage for Bangers and Mash
In a sauté pan add the stout beer and sausage. Cover the pan and turn the heat to medium heat. Cook for five minutes then flip the sausages over.
Cook for an additional five minutes. Uncover the pan and allow the liquid to reduce until there is a little liquid left and the brats have browned.
How to Make Onion Gravy
While the sausage is cooking start making the stout gravy. In another pot melt the butter and add the onions. Sauté the onions for about five minutes then add your garlic. Cook until the onions have browned.
Stir in the flour to create a roux and cook the roux until it's golden brown about 2 to 3 minutes. Keep an eye on the flour so it doesn't burn.
Slowly stir in the stout than the beef broth. Bring it up to a boil. Once it has boil reduce the heat to low and allow it to simmer until it has reached the thickness you desire.
How to Make Mash
While the gravy is cooking peel and slice the potatoes. Rinse your potato and cold water a few times until the water becomes clear to remove some of the starch. Place the potatoes in a saucepan and cover them with cold water.
Bring the potatoes up to boil and cook until you can pierce them easily with a fork. Drain the potatoes and add to your butter and the buttermilk.
Use your potato masher or mixer to mashed potatoes until they're nice and fluffy. Season with salt and pepper to taste.
How to Assemble Bangers and Mash
On a plate put a heaping pile of mashed potatoes.
On top of the mashed potatoes place a cooked sausage.
Pour the onion gravy on top of the mashed potatoes and sausage.
